Tequila, derived from the agave plant, has long been associated with Mexican culture and traditions. This spirit transformed the way we think about and consume cocktails. Tequila-based cocktails have evolved from the classic margarita to more complex, refined cocktails, like the El Diablo and Siesta cocktail that showcase the versatility and depth of the spirit.

One of the key reasons behind the rise of tequila-based cocktails is the premiumization of tequila itself. High-quality, artisanal tequilas have gained prominence, and bartenders now have access to a wide range of expressions, from blanco to añejo, each offering unique flavor profiles. This variety allows mixologists to create cocktails that highlight the nuances of tequila, whether it’s the earthy agave notes or the complexity brought on by barrel aging.

The 21st Century Cocktail is a prime example of how tequila has taken center stage in the world of modern mixology. This is a clever riff on the classic 20th Century cocktail, which includes Absinthe, Blanco tequila, white creme de cacao, and lemon juice.

The 21st Century cocktail was crafted by Jim Meehan, with the guidance of Audrey Saunders at New York’s iconic Pegu Club, in the early 2000s.

The 21st Century cocktail may seem like an odd combination at first, but when these elements are in perfect balance, it transforms into a beautiful and unique drink, a testament to the artistry of modern mixology.
